چکیده
مقدمه: علی رغم پیشرفت های قابل توجهی که در کاهش میزان مرگ و میر ناشی از بیماری های قلبی عروقی رخ داده است، هنوز هم این بیماری ها نخستین علت مرگ ومیر در بسیاری از کشور ها محسوب می شوند و هیپرلپیدمی یکی از عوامل بسیار مهم در بروز این بیماری ها می باشد. لذا هدف از مطالعه حاضر تاثیرپودرآرتمیا ارومیانا برافزایش رشد باکتری پروبیوتیک لاکتوباسیلوس اسیدوفیلوس در شیر پروبیوتیک وتاثیر آنها بر الگوی لیپیدی سرم در رت های تغذیه شده با غذای پر چرب می باشد. روش کار: جهت تعیین تأثیر دوزهای مختلف آرتمیا ارومیانا ( 0% ، 1% ، 2 % ، 3%) بر رشد باکتری پروبیوتیک لاکتوباسیلوس اسیدوفیلوس در شیر 33/0 گرم از باکتری لیوفیلیزه ی لاکتوباسیلوس اسیدوفیلوس به طور جداگانه به یک لیتر شیر کم چرب استریلیزه افزوده گردید. اسیدیته، pH و رشد میکروب ها در دوران گرمخانه گذاری و ماندگاری مورد بررسی قرار گرفت و در روز 10 پس از تولید محصولات مورد ارزیابی حسی قرار گرفتند. در ادامه 60 سر رت نر نژاد ویستار را به 6 گروه 10 تایی تقسیم و در عرض یک هفته به غذای پرچرب و آب حاوی 25 درصد شیر عادت داده شدند. سپس به مدت 60روز مورد تیمار با دوز های مختلف شیر پروبیوتیک حاوی آرتمیا اورمیانا قرار گرفتند. ازتمام گروه های مورد آزمایش در پایان روز 60 به منظور اندازه گیری میزان کلسترول، تری گلیسرید، LDL-C و میزان HDL-C خونگیری به عمل آمد. یافته ها: با بررسی نتایج مشخص شد که افزایش غلظت آرتمیا ارومیانا اثر مثبت بر روی رشد باکتری پروبیوتیک لاکتو باسیلوس اسیدوفیلوس در شیر پروبیوتیکی داشت. همچنین گروه دریافت کننده 3 درصد پودر آرتمیا ارومیانا کمترین میزان کلسترول، تری گلیسرید، LDL-C و بیشترین میزان HDL-C را داشت(p≤ 0/05). نتیجه گیری: در مجموع میتوان گفت آرتمیا ارومیانا موجب رشد باکتری ها پروبیوتیک لاکتو باسیلوس اسیدوفیلوس در شیر می گردد همچنین مصرف روزانه و طولانی مدت دوز های مختلف شیر آرتمیا ارومیانا و لاکتو باسیلوس اسیدوفیلوس از طریق کاهش کلسترول، تری گلیسرید، LDL-C و افزایش HDL-C الگوی لیپیدی سرم را بهبود می بخشد. واژگان کلیدی : آرتمیا ارومیانا، لاکتوباسیلوس اسیدوفیلوس ، الگوی لیپیدی، پروبیوتیک

Study on the effects of consumption of milk containing Artemia urmiana and Lactobacillus acidophilus on serum lipid profiles in rats that fed whit high-fat food

Introduction: Despite significant progress in reducing death rates have occurred from cardiovascular disease, these diseases are still considered as the leading cause of death in many countries and hyperlipidemia is one of the crucial factors in the occurrence of these diseases. Therefore, the aim of this study was to study the Artemia urmiana effect on Lactobacillus acidophilus bacteria in probiotic milk and their effects on serum lipid profiles in rats that fed on high fat diet. Materials and Methods: To determine effects of different dose of Artemia urmiana, (0 %, 1%,2%,3%) on growth of probiotic bacteria Lactobacillus acidophilus At a first stage(milk) and at the second stage (yogurt) were produced 0.33 g of lyophilized bacteria Lactobacillus acidophilus separately was added to a one liter sterilized low fat milk. Acidity, pH and microbial growth and survival were examined during incubation. The day after the produce, products were examined by sensory evaluation. 60 male Wistar rats were then divided into 6 groups of 10, and within a week of food and water containing 25% fat milk were used. After 60 days of treatment with different doses of probiotic milk contains Artemia urmiana were. All the groups tested at the end of day 60 to measure cholesterol, triglycerides, LDL-C and HDL-C were taken. Results: The study results indicated that the concentration has a positive effect on the growth of Artemia urmiana probiotic cultures Lactobacillus acidophilus milk probiotic found. Also groups receiving 3 percent of Artemia urmiana powder had the lowest cholesterol and the highest blood tg levels (p ≤ 0/05). Conclusion: Overall we can say that the Artemia urmiana cause the growth of probiotic Lactobacillus acidophilus bacteria in milk. And daily usage of the different doses of Artemia urmiana and lactobacillus acidophilus bacteria in milk improve the serum lipid pattern through reduction of cholesterol, triglycerides, LDL-C and increasing HDL-C levels.
